Torta Ahogada Fiesta!

Ingredients:
-3 cups of cooked white beans
-2 tomatoes, diced
-1 onion, finely chopped
-1 ½ cups shredded pork roast
-8 ounces of chorizo sausage
-5 tapped avocados
-1 can of chili peppers, diced
-2 tablespoons oregano
-2 tablespoons cumin
-4 cloves garlic, minced
-½ small head of cabbage, finely shredded
-8 potato rolls
-Cilantro, for garnish
-Lime wedges, for garnish

Instructions:

1. Preheat the oven to 325°F.

2. In a large bowl, combine the beans, tomatoes, onion, pork roast, chorizo, avocado, chili peppers, oregano, cumin, and garlic.

3. Arrange the cabbage on the bottom of an oven safe baking dish.

4. Spoon the bean mixture over the cabbage and spread the mixture evenly in the baking dish.

5. Bake for 25 minutes, or until the mixture is heated through.

6. While the mixture is baking, split the potato rolls in half and lightly toast them in the oven.

7. When the mixture is finished baking, remove from the oven and allow to cool for a few minutes.

8. Place a scoop of the bean mixture into a toasted bun and top with additional cabbage, cilantro and a lime wedge.

9. Serve the Torta Ahogada with an ice cold pilsner beer – its crisp carbonation pairs perfectly with the hearty and flavorful torta!
