Veggie Eggplant Parmesan

This dish is the perfect comfort food for any night of the week. The eggplant rounds are roasted to perfection and then layered with a homemade marinara sauce and topped with a cheesy breadcrumb mixture. Your family will love this hearty and healthy meal!

Veggie Eggplant Parmesan!

-1 large eggplant, cut into ΒΌ-inch rounds
-1 tablespoons olive oil
-1 cup shredded mozzarella cheese
-1/3 cup grated Parmesan cheese
-1 jar (24 ounces) marinara sauce
-1/2 cup Italian-seasoned bread crumbs

Instructions:
1. Preheat oven to 425 degrees F (220 degrees C).
2. Brush eggplant rounds with olive oil. Place eggplant on a baking sheet. Bake for 25 minutes, or until tender.
3. In a bowl, mix together mozzarella cheese, Parmesan cheese, bread crumbs, and parsley.
4. Spread 1/3 cup of marinara sauce over the bottom of a 9×13 inch baking dish.
5. Layer the eggplant rounds over the sauce. Spread remaining sauce over eggplant, and sprinkle with the bread crumb mixture.
6. Bake for 25 minutes, or until eggplant is tender and the topping is golden brown.
