Ingredients:

-1 lb. of Italian sausage

-1 large eggplant

-1 large zucchini

-1 large yellow squash

-1 large red pepper

-1 large green pepper

-1 onion

-4 cloves of garlic

-2 cans of diced tomatoes

-1 tbsp. of olive oil

-1 tsp. of salt

-1/2 tsp. of black pepper

-1/4 tsp. of cayenne pepper

-1/4 tsp. of dried thyme

Instructions:

1. Preheat the oven to 375 degrees Fahrenheit.

2. In a large pot or Dutch oven, cook the sausage over medium heat until it is browned.

3. Remove the sausage from the pot with a slotted spoon and set aside.

4. Add the eggplant, zucchini, yellow squash, red pepper, green pepper, onion, and garlic to the pot.

5. Cook the vegetables for about 10 minutes, stirring occasionally, until they are tender.

6. Add the sausage back to the pot.

7. Add the diced tomatoes and their juices, the olive oil, salt, black pepper, cayenne pepper, and thyme.

8. Stir everything together and then pour it into a large baking dish.

9. Bake for 30 minutes, or until the ratatouille is hot and bubbly.
