This is the ultimate BBQ pork belly sandwich! Tender, juicy pork belly is seasoned with a flavorful spice rub, then roasted until crisp and caramelized. It’s then piled high on a soft white roll, smothered in a zesty BBQ mayo, and served hot off the grill! Paired with a hoppy, fresh Sierra Nevada Celebration Fresh Hop IPA, this sandwich is sure to satisfy any appetite!

The Ultimate BBQ Pork Belly Sandwich!

Ingredients:
-1/2 pound BBQ Pork Belly
-1/2 cup Apple Cider Vinegar
-1/4 cup paprika
-1/4 cup smoked paprika
-2 tablespoons chili powder
-1 tablespoon garlic powder
-1 tablespoon onion powder
-1 tablespoon black pepper
-1/4 cup English mustard
-4 soft white rolls
-4 tablespoons butter, softened
-1/4 cup mayonnaise
-1/2 cup BBQ sauce

Instructions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Combine apple cider vinegar, paprika, smoked paprika, chili powder, garlic powder, onion powder, mustard, and pepper; pour over pork belly. Rub the mixture into the meat.
3. Place pork belly in a baking dish, and bake for 1 1/2 hours, or until very tender.
4. Meanwhile, split the rolls horizontally. Spread the softened butter on the cut sides of the rolls.
5. Grill or broil the pork belly on a rack over a drip pan until crisp and browned, about 5 minutes per side.
6. Combine mayonnaise and BBQ sauce; spread on the cut sides of the rolls.
7. Slice the pork belly thinly, and place on the bottom halves of the rolls. Replace the tops of the rolls, and serve immediately.
