Mushroom Madness Sandwich!
-2 slices of focaccia bread
-2 tablespoons of mayonnaise
-1 tablespoon of Dijon mustard
-4 ounces of white button mushrooms, sliced
-4 ounces of baby Portobello mushrooms, sliced
-4 ounces of shiitake mushrooms, sliced
-2 cloves of garlic, minced
-1 tablespoon of olive oil
-½ teaspoon of smoked paprika
-1 tablespoon of white wine vinegar
-4 leaves of romaine lettuce
-4 ounces of Swiss cheese, sliced
1. Preheat a large non-stick skillet over medium-high heat.
2. Spread 1 tablespoon of mayonnaise on one side of each focaccia bread slice.
3. Spread the Dijon mustard on the other side of each focaccia bread slice.
4. Add the mushrooms, garlic and olive oil to the preheated skillet. Cook, stirring occasionally, for 7 minutes or until all the mushrooms are golden brown and cooked through.
5. Add the smoked paprika and white wine vinegar to the skillet and cook for a further 2 minutes.
6. Compose the sandwich by adding the mushroom mixture to one side of the focaccia bread and topping it with lettuce, Swiss cheese, and the other slice of focaccia bread.
7. Turn down the heat to medium-low and place the sandwich in the skillet. Cook for 3-4 minutes per side or until the bread is golden and the cheese has melted.
8. Slice the sandwich in half and serve!
