Vegetarian Shepherd’s Pie! $20
Ingredients:
-1 15 oz can of Pinto Beans, drained and rinsed- $1
-1 15 oz can of Corn, drained- $1
-3 Medium Yukon Gold Potatoes, diced- $1
-2 Carrots, diced- $1
-1/2 Red Onion, diced- $1
-1 Tbsp Olive Oil- $1
-1/2 tsp Paprika- $1
-2 cloves of Garlic, minced- $1
-1/4 cup Greek Yogurt- $2
-Salt and Pepper, to taste- $1
Instructions:
1. Preheat oven to 375°F.
2. Heat a medium saucepan over medium-high heat and add the olive oil. When the oil is hot, add the onions, carrots, and garlic and cook, stirring occasionally, until the vegetables are tender, about 4 minutes.
3. Add the corn, pinto beans and paprika to the pan and cook, stirring occasionally, for another 2 minutes.
4. Meanwhile, put the potatoes in a pot and cover with cold water. Bring to a boil over medium-high heat and then reduce the heat to low and simmer until softened, about 10 minutes. Drain the potatoes and mash with the Greek yogurt, adding salt and pepper to taste.
5. Take the vegetable mixture and spread it evenly into a 9-inch round baking dish.
6. Spread the mashed potato mixture over the vegetables and spread evenly.
