Ingredients:
-3oz fresh egg pasta dough
-1oz sliced beef, pork, and veal
-1/4 teaspoon nutmeg
-2 tablespoons butter
-3 tablespoons extra virgin olive oil
-1/4 cup diced onion
-2 tablespoons tomato paste
-1 cup beef broth
-1/4 cup grated Parmesan cheese
-Salt and pepper to taste
-1/4 cup cream
-1/2 cup shredded Mozzarella cheese

Instructions:

1. In a bowl, mix together the egg pasta dough, adding 2 tablespoons of extra virgin olive oil. Knead dough until firm but pliable, about 10 minutes.

2. Cut the dough into small pieces and roll it out using a rolling pin, to about 1/4 inch thickness.

3. With a knife, cut the dough into wide strips, about 3/4 inch wide.

4. In a small pan, melt the butter and 2 tablespoons of extra virgin olive oil, then add the sliced beef, pork and veal, stirring until cooked.

5. Add in the diced onion and nutmeg, stir in the tomato paste and cook for 2 minutes until the onion is softened.

6. Pour in the beef broth and let simmer until most of the liquid has evaporated.

7. Remove the pan from heat and stir in the cream and Parmesan cheese, then season with salt and pepper.

8. Place a layer of the egg pasta strips in the bottom of a baking dish, top with a layer of the bolognese sauce, followed by a layer of mozzarella cheese.

9. Repeat the layers, ending with the last layer of egg pasta strips.

10. Bake in preheated oven for 25 minutes at 350° F.

11. Allow to cool before serving.
