Recipe for Sausage and Red Pepper Ragu

1. 500 grams of Smoked Sausage
2. 1 large Red Bell Pepper
3. 400 grams canned Chickpeas
4. 400 grams of diced Tomatoes
5. 2 Red Chilies, seeds removed
6. 50 grams of Olives, pitted
7. 1 tablespoon of Paprika (optional)
8. 2 tablespoons of Olive Oil
9. 2 cloves of Garlic, minced
10. 1 large Onion, chopped
11. 1 cup of Tomato Sauce
12. Salt and Pepper to taste
13. Fresh Parsley or Spinach leaves for garnish

For the Red Pepper Paste:
1. Red Pepper Flakes or 1 Red Chili
2. 1 clove of Garlic
3. Olive oil
4. Salt


1. Start by thinly slicing your smoked sausages and set them aside.

2. Heat the olive oil in a large pan over medium heat, add the sliced sausages and cook until they get a nice brown color. Then remove them from the pan and set aside.

3. In the same pan, add the chopped onion and minced garlic. Sauté them until onion becomes translucent.

4. Add the diced tomatoes, red bell pepper, red chilies, and paprika (if using). Allow it to simmer until the tomatoes and peppers have softened.

5. Next, add the chickpeas, olives, and the tomato sauce to the pan. Stir well and let it simmer for another 10 minutes. Season it with salt and pepper to taste.

6. While your ragu is simmering, we can prepare the red pepper paste. Combine red pepper flakes or red chili, garlic, olive oil, and a pinch of salt in a blender. Blend it until it forms a smooth paste.

7. Once your ragu has simmered, add the cooked sausages back into the pan and stir them in. Let it simmer for another 2 to 3 minutes, allowing the sausages to blend with other ingredients.

8. To serve, spoon your ragu into a plate, add a smear of the red pepper paste on the side, and garnish it with fresh parsley or spinach leaves. Enjoy your Sausage and Red Pepper Ragu!
