Lemon-Garlic Pesto Shrimp with Angel Hair Pasta!
Ingredients:
– ¼ cup extra virgin olive oil
– 6 cloves garlic, minced
– Salt and fresh cracked pepper, to taste
– ¾ cup sundried tomatoes, roughly chopped
– 2 tablespoons fresh lemon juice
– 4 tablespoons unsalted butter
– 2 tablespoons chopped fresh thyme leaves
– 4 tablespoons Pesto sauce
– 1 ½ pounds medium-sized shrimp, peeled and de-veined
– 6 ounces angel hair pasta
– 2 tablespoons freshly chopped parsley leaves
– ⅓ cup freshly grated Parmesan

Steps:
1. Heat olive oil in large pan over medium heat. Add garlic, salt and pepper and cook until fragrant, about 1 minute.
2. Add the sundried tomatoes, lemon juice and butter, stirring until the butter has melted.
3. Add the thyme and pesto, stirring until the ingredients are combined.
4. Add the shrimp and cook for about 4 minutes, stirring occasionally, until shrimp are pink and cooked through.
5. While shrimp are cooking, bring a large pot of salted water to a boil over high heat. Add the angel hair pasta and cook for 3-4 minutes, or until al dente.
6. Drain the pasta and add to the shrimp. Toss to combine, sprinkling in parsley and Parmesan cheese. Serve warm.
