Chocolate Nutella Lovers Dream Cake!
– 2 cups of all-purpose flour
– 2 cups of granulated sugar
– ¾ cup of natural cocoa powder
– 2 tsp baking soda
– ½ tsp baking powder
– ¾ cup of vegetable oil
– 1 cup of strong freshly brewed coffee
– 2 large eggs
– ¼ cup of buttermilk
– 1 tsp of vanilla extract
– ½ tsp of almond extract
– 1 jar of Hazelnut flavoured Nutella spread
For the Mousse
– 300mL of whipping cream
– 100grams of dark chocolate
– 2 tablespoons of Frangelico hazelnut liqueur
1. Preheat oven to 350F. Grease and flour two 9-inch cake pans.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and baking powder.
3. In another separate bowl, whisk together the oil, coffee, eggs, buttermilk, vanilla and almond extract.
4. Then add the wet ingredients to the dry ingredients, mix until everything is well combined.
5. Evenly divide the batter between the two prepared cake pans and bake in the preheated oven for 30-35 minutes. Or until a toothpick inserted comes out clean.
6. Let cool completely, as you’re letting the cakes cool, start making the mousse.
7. For the mousse, in a heatproof bowl, over a pot of simmering water, melt the chocolate. Set aside and let cool slightly.
8. In a separate bowl, beat the cream until soft peaks form.
9. Add the liqueur and continue mixing until stiff peaks form.
10. Gently fold in the melted chocolate with a spatula until everything is smooth and well combined.
11. Refrigerate the mousse until ready to assemble the cake.
12. To assemble the cake, first place the top layer of cake, spread the Nutella on top, then the second layer of cake, spread the mousse on top, and if desired, decorate the sides with remaining mousse, or add hazelnuts for garnish.
Refrigerate for about 1 hour before serving.
