-2 rashers smokey bacon
-2 slices cheddar cheese
-2 thin slices pancetta
-2 thin slices of pork belly
-2 Tbsp butter
-Salt and pepper
1. Preheat a griddle pan over medium-high heat.
2. Cut ciabatta in half and spread butter evenly over each half.
3. Toast the ciabatta in the griddle pan for 2-3 minutes on each side until lightly toasted.
4. Remove the ciabatta from the griddle pan and set aside.
5. Place bacon, pancetta and pork belly on the griddle pan and cook for 1-2 minutes on each side until they are crisp.
6. Place the slices of cheddar cheese onto the toasted ciabatta and top with the bacon, pancetta, and pork belly.
