– ½ cup of mayo
– 2 tablespoons of yellow mustard
– 2 tablespoons of apple cider vinegar
– 1 teaspoon of sugar
– 1 teaspoon of a spicy chili powder
– 4- 5 slices of thinly sliced deli ham
– 1/2 of a large purple cabbage
– ½ of a large red onion
– 1/3 cup of diced celery
– 1 1/2 tablespoons of black pepper
– 2 tablespoons of dill pickle juice
– 2 tablespoons of cider vinegar
– 2 tablespoons of olive oil
– 2 tablespoons of butter
– 1 cup of panko crumbs
– Olive oil
– Salt and pepper to taste
– Bread and Butter pickles

Instructions:
1. Preheat grill to medium-high heat.

2. In a large bowl, combine olive oil, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and brown sugar. Rub this mixture on the chicken breasts, then place in a large bowl.

3. Mix together the bourbon BBQ sauce and sliced peaches, then brush each side of the chicken breasts with the sauce.

4. Grill chicken for about 10 minutes per side or until the internal temperature reaches 165°F.

5. In a medium bowl, whisk together mayo, yellow mustard, apple cider vinegar, and sugar. Once combined, add the spicy chili powder and mix.

6. In another medium bowl, combine the purple cabbage, red onion, celery, and black pepper. Add the mustard and mayonnaise mixture and stir to combine.

7. In a small saucepan over medium heat, combine dill pickle juice and cider vinegar and heat until steaming. Remove from the heat and whisk in olive oil, then pour over the slaw. Stir to combine and set aside.

8. In a shallow dish, mix together the panko crumbs, butter and olive oil. Spread out on a clean dry surface and sprinkle with salt and pepper.

9. When the chicken breasts are cooked, set aside and let rest.

10. Preheat the oven to 400°F and place the focaccia slices onto a baking sheet lined with parchment paper. Place the slices into the oven and toast for 5 minutes.

11. To assemble the sandwiches, spread a generous amount of the spicy slaw onto each of the focaccia slices. Place a thinly sliced deli ham slice onto each bottom focaccia slice, followed by a chicken breast. To finish, top the chicken with pickles and crispy onions and place top focaccia slice onto the sandwich. Serve!
