Ingredients:
-100g High Quality White Chocolate
-1/2 cup Heavy Whipping Cream
-1/4 cup Honey
-50g Unsalted Butter
-4 Egg Whites
-4 Egg Yolks
-1/2 cup Callebaut Milk Powder
-100g All-purpose Flour
-3 ripe Mangoes
-2 large Passion Fruits
-1 cup Brown Sugar
-1 teaspoon Baking Powder
-1 teaspoon Vanilla Extract
-1/4 teaspoon of Salt
-150g Ice Cream of Choice
-2 tablespoons Dark Rum

Steps:
1. Preheat oven to 375 degrees.
2. Place butter and chocolate in a glass heatproof bowl and melt over a saucepan of boiling water. Stir until smooth, then set aside to cool.
3. In a medium bowl, whisk together egg whites, egg yolk, vanilla extract, salt and brown sugar until lightened in color.
4. In a separate bowl, mix together the flour and baking powder.
5. Slowly mix in the cooled chocolate mixture to the egg mixture with a hand mixer on low speed until combined.
6. Add in the flour and baking powder mixture and combine until smooth.

12. Remove cake from oven, poke holes into it and fill with the passion fruit mango whipped cream. Top with ice cream and roll into a log shape.
13. Place in the freezer for 30 minutes to set.
14. Preheat oven to 400 degrees.
15. Then remove from freezer and brush the log with the rum. Bake for 10 minutes, or until golden brown.
