Ingredients: -1 lb ground beef -1 cup white onion, diced -1 cup celery, chopped -2 tablespoons garlic, minced -2 tablespoons olive oil -6 cups low sodium beef broth -1 cup carrots, chopped -2 tablespoons fresh chopped parsley -1/2 cup barley -1/2 cup small pasta (such as ditalini or acini di pepe) -1/2 teaspoon black pepper -2 cups kale, lightly chopped -1 teaspoon Italian seasoning Instructions: 1.In a large soup pot, heat olive oil over medium high heat. 2. Add the onion, celery and garlic to the pot and sauté for 6 minutes, or until the vegetables begin to soften. 3. Crumble the ground beef into the pot and cook for about 6 minutes. 4. Pour in the beef broth and bring the soup to a gentle boil. 5. Stir in the carrots, parsley, barley, pasta, and black pepper and simmer for 15 minutes, stirring occasionally. 6. Add the kale to the soup and simmer an additional 5 minutes. 7. Stir in the Italian seasoning and remove from heat. Pair with a light, dry white wine such as a Sauvignon Blanc!
