Creamy Mushroom & Spinach Lasagna!
• 2 tablespoons of all-purpose flour
• 2 tablespoons of butter
• ¼ cup chopped onion
• ¼ cup 2% milk
• ½ cup vegetable broth
• 1 (10-ounce) package frozen spinach, thawed
• ¼ teaspoon black pepper
• 8 ounces sliced mushrooms
• 2 tablespoons tomato paste
• ¼ cup ricotta cheese
• ¼ cup grated Parmesan cheese
• lasagna noodles (9-12 noodles)
• 1 cup shredded mozzarella cheese
1. To make the fresh lasagna noodles, gather 2 cups of all-purpose flour and 2 large eggs. On a flat work surface, form a mound of the flour and create a well in the center to crack both eggs into. Begin whisking the eggs together with a fork until all of the flour is incorporated. As the mixture starts to form a dough, use your hands to knead the dough for about 5 minutes. Shape the dough into a ball, cover with a damp towel, and allow to rest for 15 minutes.
2. Once the dough has rested, roll the dough out until it’s roughly 1/8-inch thick. Cut the dough into 9-12 long noodles. Set aside.
3. In a large saucepan, melt butter over medium-high heat. Add onion and sauté for 5 minutes. Add flour, stirring until a paste forms. Reduce heat to medium-low and cook for 2 minutes, stirring continuously. Add milk, broth and pepper. Stir until smooth. Raise heat to medium-high and bring to a boil. Reduce heat and simmer for 3 minutes, stirring frequently.
4. Add spinach, mushrooms, and tomato paste. Simmer for 10 minutes, stirring often. Stir in ricotta, 1/4 cup Parmesan, and salt to taste. Simmer for another 5 minutes.
5. Preheat oven to 375°F. Spread a thin layer of the spinach mixture along the bottom of a 9-inch baking dish. Top with a single layer of noodles. Cover noodles with a layer of the spinach mixture, followed by a layer of mozzarella cheese. Continue layering noodles, spinach mixture, and mozzarella cheese until all ingredients are used up. Sprinkle the remaining ¼ cup of Parmesan cheese on top.
6. Bake lasagna in preheated oven for 30 minutes or until top is golden brown and bubbling.
7. Enjoy with a glass of Cabernet Sauvignon!
