Steps:
1. Preheat oven to 375°F (190°C).
2. Cut pork loin slice in half, flatten with a meat tenderizer to about 1-cm thickness.
3. Coat pork loin slice in flour, then dip in egg, and finally coat in breadcrumbs.
4. Heat 2 tbsp of vegetable oil in a non-stick frying pan. Fry pork loin slice for 3 to 4 minutes on each side until golden brown and crispy. Transfer to a baking sheet and bake in the oven for an additional 5 minutes.
5. Cook 2 slices of bacon in the same frying pan until crispy.
6. Toast the ciabatta roll in the oven.
7. In a small mixing bowl, mix together 1 tbsp mayonnaise and 1 tbsp Dijon mustard.
8. Spread the mayo and mustard mixture on the bottom half of the ciabatta roll.
9. Add pork schnitzel slice on top of the sauce, followed by bacon, caramelized onions, and a handful of arugula.
10. Season with salt and pepper to taste.
11. Close the sandwich with the top half of the ciabatta roll. Serve hot.
