Ingredients:
-1 head of cooking celery
-1 tablespoon of thyme
-1 teaspoon of garlic powder

-1 tablespoon of Worcestershire sauce
-1 tablespoon of apple cider vinegar
-3 tablespoons of ketchup
-1/2 cup of canola oil
-1/2 cup of brown sugar
-2 tablespoons of hot sauce
-1 teaspoon of paprika
-1/2 teaspoon of cayenne pepper
-1/2 teaspoon of sea salt
-3 pounds of pork shoulder
-1 toasted kaiser bun

Instructions:
1. Preheat the smoker to 225° Fahrenheit, then add your choice of wood chips.
2. Meanwhile, in a large bowl, combine the celery, thyme, garlic powder, oregano, onion powder, black pepper, Worcestershire sauce, vinegar, ketchup, canola oil, brown sugar, hot sauce, paprika, cayenne pepper, and sea salt.
3. Rub the mixture over the pork shoulder, including inside the crevices.
4. Place the pork shoulder on the smoker, fat-side up, and cook for 4-5 hours. Then, increase the heat to 300°F and smoke for an additional 1-2 hours.
5. When the pork is fork-tender, remove it from the smoker and let cool for an hour.
6. Shred the pork shoulder and serve on a toasted Kaiser bun.
