Raspberry Glazed Pork Belly Sandwich!
Ingredients:
-1/2 lb pork belly cubes
-1/2 cup raspberry chipotle glaze
-1/2 cup sesame ginger slaw
-1 tablespoon of spicy mayo
-1 toasted brioche bun
To make the sesame ginger slaw:
-1/2 cup finely chopped cabbage
-2 tablespoons of sesame oil
-1 tablespoon of ginger
-1 teaspoon of sesame seeds
-1 teaspoon of garlic powder
-1 teaspoon of soy sauce
-1/2 teaspoon of sea salt
-A pinch of black pepper
In a mixing bowl, combine cabbage, sesame oil, and ginger. Stir in sesame seeds, garlic powder, soy sauce, sea salt and black pepper. Toss until ingredients are evenly distributed.
To make the spicy mayo:
-1 cup of mayonnaise
-1 teaspoon of chipotle powder
-1/2 teaspoon of garlic powder
-1 teaspoon of smoked paprika
In a mixing bowl, whisk together mayonnaise, chipotle powder, garlic powder, and smoked paprika.
To make the Pork Belly:
-Preheat oven to 300°F. Line a baking sheet with parchment paper.
-Place the pork cubes on the baking sheet in a single layer.
-Bake for about an hour, turning and basting with glaze several times during cooking.
-Once the pork is cooked, remove from oven and let it cool for about 10 minutes.
-When the pork has cooled, assemble the sandwich.
-Spread the toasted brioche bun with 1 tablespoon of spicy mayo.
-Fill the bun with thick cubes of glazed pork belly and sesame ginger slaw.
-Serve with a zesty Sauvignon Blanc.
