Fire-Roasted Peach Tart with Candied Pecans and Bourbon Honey Mascarpone Cream!
Ingredients
– 4 Peaches, peeled, pitted and quartered
– 2 Sweet Pie Crust Dough balls
– ½ cup Pecan Halves
– ½ cup Brown Sugar
– 1/4 cup Butter
– 1/4 cup Dark Corn Syrup
– 1/4 cup Honey
– 1/4 cup Bourbon
– 1 cup Mascarpone
– Pinch of Salt
– Powdered Sugar to garnish
Steps
1. Preheat oven to 375F
2. Roast the peaches over an open flame until the peaches are lightly browned and tender then set aside to cool.
3. Roll out the two pie crusts and place one in a round tart pan.
4. In a medium saucepan add the Brown Sugar, Butter, Dark Corn Syrup, Honey and Salt. Cook until the sugar is melted and the mixture comes to a boil stirring occasionally.
5. Add in the Pecan Halves and continue to cook for 3-5 minutes until thickened.
6. Place the cooked peaches in the tart pan and evenly spread the Pecan mixture over the top.
7. Cover with the second crust and press down on the edges of the crust to seal. Cut away any excess dough.
8. Bake for 35 to 40 minutes until the crust is golden brown. Let cool for 10 minutes.
9. In a medium bowl add Mascarpone, Honey and Bourbon, whisk together until light and fluffy.
10. Drizzle the Bourbon Honey Mascarpone Cream over the tart and sprinkle with Powdered Sugar to garnish.
