– 10 cannelloni tubes

– 2tbsp olive oil
– 3 cloves garlic, minced
– ¼ tsp of chilli flakes
– 2tbsp of fresh parsley, finely cut

Instructions:
1. Preheat the oven to 375°F.
2. Heat the olive oil in a large pan over medium heat.
3. add in the garlic and cook until fragrant, about 2 minutes.
4. Slice the sausage into ¼-inch-thick pieces, and add to the pan.
5. Cook the sausage until it’s browned and cooked through, about 10 minutes. Add in the chilli flakes.
6. In a bowl, mix together the sausage mixture and goat cheese crumbles.
7. Grease an oven-proof dish, then line the bottom with a thin layer of tomato sauce.
8. Lay the cannelloni tubes on a flat surface and spoon the sausage and goat cheese mixture into each of them.
9. Place the tubes in the oven-proof dish and top with the remaining tomato sauce.
10. Sprinkle the mozzarella cheese over the top, then bake for 40 minutes.
11. Sprinkle with fresh parsley and serve warm.
