Grilled Classic Falafel Sandwich!
Ingredients:
– 2 cups of dry chickpeas
– 1 small onion
– 1 teaspoon of cumin
– 1 teaspoon of garlic powder
– 2 teaspoon of salt
– Juice of a lemon
– 1/2 cup of flour
– 2 tablespoons of olive oil
– 2 tablespoons of sesame seeds
– 2 flatbreads
– 1 tablespoon of olive oil
– 1 teaspoon of garlic powder
– 2 tablespoons of Greek yogurt
– 4 leaves of lettuce
– 4 slices of tomatoes
– 2 tablespoons of red onion

Steps:
1. Soak the dry chickpeas overnight.
2. Drain the soaked chickpeas and put them in a food processor with the onion, cumin, garlic powder, salt and lemon juice. Chop for a minute or two until it’s a chunky paste.
3. Transfer the paste to a bowl, add the flour and mix until it forms a thick dough.
4. To shape the patties, make small balls out of the dough, about the size of a golf ball, then press each of them with the palm of your hand to form into a flat round shape.
5. Add the olive oil to a large skillet and heat up on a low/medium heat. Add the falafel patties to the skillet and fry them on both sides until they have a golden-brown color.
6. Once they are cooked through, add the sesame seeds to a bowl.
7. Take each falafel patty and dip it in the sesame seeds so the outside area is covered in the seeds.
8. Heat up a pan with the tablespoon of olive oil and garlic powder. Add the two flatbreads and fry them on both sides for about a minute or two.
9. Take the flatbreads off the stove and spread the two tablespoons of Greek yogurt in each of them.
10. Put two patties in each flatbread and cover with lettuce, tomato, red onion, and extra Greek yogurt to taste.
11. Seal the sandwich, cut in half, and enjoy!
