2. Knead the dough on a lightly floured work surface for five minutes or until the dough is smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

3. Roll the dough out on a lightly floured surface, until it’s about 1/8-inch thick. Cut out circles of dough using a biscuit cutter dipped in flour.

4. Place ½ teaspoon of ricotta cheese in the center of each circle of dough. Gather the edges together and press to close and form the raviolis.

5. In a large skillet, melt the butter over medium heat. Add sage and cook for 2 minutes. Add raviolis to the pan and cook until golden brown, about 3 minutes per side.

6. Serve the raviolis with sage brown butter sauce, freshly grated Parmesan cheese and salt and pepper, to taste.
