Fiery Focaccia Salmon Sammie!
Ingredients:
– 1 salmon filet
– 1 lemon
– Fresh herbs of your choice (parsley, thyme, etc)
– 2 cloves of garlic
– 1 ½ tablespoons of paprika
– 1 ½ teaspoons of oregano
– 1 teaspoon of salt
– ¼ teaspoon of black pepper
– 2 tablespoons of olive oil
– 1 focaccia roll
– Parmesan cheese
– Any additional condiments of your choice
Instructions:
1. Rinse salmon filet to remove and debris and pat dry
2. Coarsely chop the garlic and add it to a mixing bowl.
3. Add in paprika, oregano, salt and pepper and mix to combine.
4. Squeeze the juice of 1 lemon and add it to the mixture.
5. Finely chop the herbs of your choice, add them to the mixture and stir to combine.
6. Rub the mixture on the salmon filet until it is completely coated.
7. Heat the olive oil in a skillet over medium heat and place the salmon filet in the skillet.
8. Cook both sides of the salmon until the outside of the salmon is blackened and the inside is cooked to your desired temperature.
9. Slice the focaccia roll and place it on a baking sheet. Place the baking sheet in the oven on 350 degrees for a few minutes until the roll is toasted.
10. Assemble the sandwich by adding the blackened salmon fillet to the roll, then top with Parmesan cheese and desired condiments.
