Grilled Chicken Parmesan Ciabatta Sandwich!
Ingredients:
– Ciabatta Loaf
– 2 tablespoons olive oil
– 2- 3 ounces of boneless, skinless chicken breast
– Salt & pepper
– 2 tablespoons oregano
– 2 tablespoons garlic powder
– 1 tablespoon pepper flakes
– ½ cup all-purpose flour
– 2 eggs
– 2- 3 tablespoons of milk
– 1 cup breadcrumbs
– ¼ cup parmesan cheese
– 2 tablespoons parsley
– 3 tablespoons tomato sauce
– ¼ cup mozzarella cheese

Steps:
1. Preheat your oven to 375 degrees.
2. Begin by slicing the Ciabatta Loaf into 2 equal halves, width wise
3. In a bowl, mix together 2 tablespoons olive oil, oregano, garlic powder and pepper flakes
4. Coat the chicken breast with the olive oil mixture.
5. In a shallow bowl, mix together the flour and salt & pepper.
6. In a separate shallow bowl, whisk together the eggs and milk
7. In another shallow bowl, combine together the breadcrumbs, Parmesan cheese, parsley, and a pinch of salt & pepper.
8. Dip the chicken in the egg mixture, then in the flour, then in the egg mixture again and finally in the breadcrumb mixture.
9. Place the chicken on a baking try lined with parchment paper.
10. Bake for 25 minutes.
11. Spread the tomato sauce on the inside of each Ciabatta half.
12. When the chicken is cooked through, remove it from the oven and slice it into thin slices.
13. Place the chicken slices on one of the Ciabatta halves.
14. Top the chicken with the mozzarella cheese.
15. Place the other Ciabatta half on top.
16. Place the sandwich in the oven and bake for 5 minutes.
17. Remove from the oven and serve the sandwich warm.
