Ingredients:
– One 4 oz salmon filet
– 2 Tablespoons olive oil
– 2 Tablespoons Dijon mustard
– 2 Tablespoons honey
– 1 teaspoon black pepper
– 2 Tablespoons mayonnaise
– 2 Tablespoons horseradish
– 2 Tablespoons lemon juice
– 2 Tablespoons orange juice
– 2 Tablespoons fresh cilantro
– 2 Tablespoons purple cabbage, shredded
– 2 Tablespoons red onion, diced
– 2 slices whole grain bread

Instructions:
1. Prepare the marinade for the salmon by whisking together the olive oil, Dijon mustard, honey and black pepper in a bowl until combined.
2. Rub the marinade over the salmon filet.
3. Grill the salmon filet for about 5 minutes on each side or until cooked throughout.
4. Once the salmon is cooked, lightly break apart with a fork to style burger like shape then set aside.
5. To make the citrus slaw, whisk together the mayonnaise, horseradish, lemon juice and orange juice in a bowl until combined.
6. To the same bowl, add the cilantro, purple cabbage and red onion and mix until combined.
7. To assemble the sandwich, lay the two slices of bread onto a plate.
8. Top one side of the bread with the horseradish mayo, salmon burger and citrus slaw.
9. Add the top of the bun and serve.
10. Serve with an ice cold glass of wheat beer!
